Flaky Crusty Apple Pie


I was watching Martha Stewart's Thanksgiving Special on the television yesterday and was inspired to make an apple pie as she was showing how to make an apple pie on the show. I had to make some apple pie for my family and started taking out all the ingredients and made some apple pie dough together with her.....(wow.. you can call that spontaneous..) My brother in law knows how to make a good apple pie too as I was recalling my sister's remarks last year when I met her...
I managed to take pull out my old recipe- revised and healthier version....less butter and less sugar in it....I did make the dough and chill it in the fridge.Here is my own  lighter apple pie recipe for you to try out.....



Flaky Crusty Apple Pie 
Ingredients: 
Pie Dough 
16 oz all purpose flour 
2 oz whole wheat flour  
6 oz butter - cold and cut into small cubes
6 fl oz ice water 

Pie Filling 
4 medium size gala apples - peel , cored and cut thin slices 
1 tbsp lemon juice 
1 tbsp grated lemon zest
1/3 cup sugar 
1 tsp ground cinnamon 
2 tbsps cornstarch 


1 egg yolk  - for egg wash





Method : Pie Dough 
Put all the flour in a large bowl. Add the cold butter and use 2 forks  to blend the butter into the flour till it resembles coarse breadcrumbs. Then add the cold ice water and mix till combined. Use your hands to form the dough into a ball. Then divide the dough into two balls. Wrap them with  plastic wrap and keep in the fridge to chill for at least 1 hour. 

Take it out from the fridge and flour the working surface to roll out the dough into two round 12 inches disks. Put one of the disks into the pie plate. Make sure that the dough doesn't stretch in the pie plate. Chill the dough and the top of the pie dough while you prepare  the apple filling for 15 minutes. 


Preheat the oven to 350 F / 180 C.



Method : Pie Filling

Peel , core and cut all the apples into thin slices and put into a bowl with some lemon juice to prevent them from turning brown. Add the sugar , lemon zest , cornstarch and ground cinnamon into the apples and mix gently with a spoon.

Pour the filling into the pie shell and then put the top on to cover the apples . Crim the edges and brush the pie with some egg wash. Bake it at a preheated oven in the middle  rack  for  about 1 hour and 15 minutes till it is golden brown and flaky crust. 
Cool on a wire rack for at least 30 minutes before cutting it. Serve with your favourite vanilla ice-cream or a dollop of whipped cream. Enjoy...
