Christmas Chocolate Snowballs



These are my favourite cookies as they look like snowballs as it was inspired by snow falling on rocks......and they are made with soft margarine instead of butter and whole wheat flour and cornstarch.....they are crunchy and not too sweet .....strong chocolatey flavour from the rich cocoa powder...yummy....if you like chocolate ....this cookie is for you......my son loves this cookie too.....we made some together for his teacher as a Christmas gift......here is the simple recipe for a cookie which is delicious and easy to make....enjoy....

Christmas Chocolate Snowballs
Ingredients : 
1 cup unbleached plain flour 
6 oz  whole wheat flour
2 oz cornstarch 

4 oz cocoa powder 
10 oz icing sugar 
2 eggs 
4 oz soft margarine

To decorate :
4 oz icing sugar



Method : 
Sift all the flour and cocoa powder together in a large bowl and set aside. Cream the margarine and sugar together till fluffy and then add the eggs and beat till combined. Add the flour mixture into the margarine mixture and mix well till combined. Wrap it with some plastic wrap and refrigerate for about 20 minutes. Line 2 baking sheets with some parchment paper and preheat the oven to 350 F / 180 C. Using a teaspoon to scoop the dough and use your hands to make small round balls. Put them about 1 inch apart on the baking sheet and bake for about 12 minutes till it crackles. Leave to cool on the rack for about 10 minutes before dusting with some icing sugar. 
Keep in an air tight container for about 3- 4 days if they can last that long !!!
