Halloween Spaghetti Bolognese



Halloween was a fun time as I could experiment with some recipes and make it different  so that it looks scary and my son loves it....this year I made some spaghetti bolognese with some tomato sauce and minced beef .....the noodles looked like worms and the meat sauce represents the .........well, I let your own imagination to figure that out .....
Anyway, we had a nice dinner and played dress up that night  and here is a twisted recipe of the traditional spaghetti bolognese and hope that you would like it too....

Spaghetti Bolognese  
Ingredients: 

1 1/2  lb ground sirloin beef 
1 cup chopped red onions
1 tbsp minced garlic 
1 tbsp olive oil 
3/4 cup diced carrots 
3/4 cup diced celery 
1/2 tsp salt 
1/4 tsp black pepper 
1/2 teaspoon dried thyme 
1/4 teaspoon dried oregano 
1/2 teaspoon ground cinnamon 
1/2 teaspoon ground nutmeg
1 can tomato paste
1 cup beef / chicken stock
2 tbsps chopped fresh parsley leaves
1 lb spaghetti 


Method : 
Heat a large pan and add some olive oil to heat up over medium heat. Fry the chopped onions and garlic till fragrant. Then add the carrots and celery, stirring till soft about 4-5 minutes. Add the spices to cook about 30 seconds. Add the ground sirloin beef and cook stirring till  no longer pink about 5-8 minutes.Add the tomato paste and stir about 2 minutes. Add the beef stock to deglaze the pan and remove the browned bits sticking from the pan. Bring it to a boil and then lower the heat to simmer for about 20 minutes till the sauce  thickens and  flavourful.Add salt and black pepper to taste.


In the meantime , bring a large pot of salted water  to a boil. Add the pasta and return the water to a low boil. Cook stirring constantly to prevent the spaghetti noodles from sticking until al dente , 8 to 10 minutes or according to the pasta's package. Drain in a colander. 

Divide the pasta among  each individual plate and serve it with some meat sauce on top of it.  
Sprinkle with some chopped fresh parsley. and serve it warm with some crusty french bread on the side.
