Delicious Morrocan Lamb Stew


Wow....the artic air is so cold tonight and what a great idea to make some stew and I was thinking what type of stew to make and my dearest hubby just gave me a hint that we had not eaten lamb for a while and here it is my own version of the classic morrocan lamb stew and it is lighter for you who are watching your diets in this new year......I know ....we have to keep our new year resolutions.....in the beginnning of the year......so I have this great warm stew recipe for lamb lovers out there.....enjoy this recipe and keep your body warm and healthy from sickness.....I hope......bon appetit !!!


Delicious Morrocan Lamb Stew
Ingredients :
2 lbs lamb shoulder - cut into 1 inch cubes
1/2 tsp salt
1/4 tsp black pepper
1 red onion - chopped
2 shallots - chopped
4 garlic - chopped
1 inch fresh ginger - chopped finely
2 tsps cumin powder
2 tsps ground coriander
1 tsp tumeric powder
1 cinnamon stick
1 pinch of saffron
4 red potatoes - peeled and cut into quarters
4 carrots - peeled and cut into 1 inch chunks
some cilantro leaves
4 cups water
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil

Method :
Heat the large frying non stick pan and add some olive oil to saute the onions, shallots , ginger, garlic and the spices till fragrant.Add the lamb ,potatoes and carrots and fry for about 3 minutes before adding the water, seasonings  and saffron. Bring the pot to a boil and then simmer at low heat for 2 hours. Serve it with some french bread or rice pilaf and garnish with some cilantro leaves.
