Well, I had not been home for about a year now and really missed all the food from my hometown and this particular recipe is one of the famous breakfast food which my family often go and eat at the stall in Johor ...it is a teochew dish and we usually eat them in the morning for breakfast...I remembered when we were little girls my parents used to bring us to a place downtown where there were stalls and this one stall is selling the teochew style kway chap and we loved it a lot for breakfast....there is lean pork , hard boiled eggs ,firm tofu pieces , slices of silky pig skins, slices of other pigs internal organs such as pig stomach ,small  intestines and pig tongue....yum....I know most of the people who have not tried would think it is gross but once you have tried it you would love it......My hubby loves it after he tried some when he was in Johor and from that day onwards, he would make request for it to me made at home...and I scoured a lot of recipes and asked my mother what are the main ingredients in the soup......she told me and I put it down into a recipe of my own and here it is to share with all of you who love to eat kway chap........just like us.......enjoy.....


Lattara's Homestyle Kway Chap

Ingredients :  Soup
16 oz pork ribs - cut into strips
8 oz  lean pork - cut into 1 inch cubes
1/2 tsp salt
1/4 tsp black pepper
2 tsps light soya sauce
1 tbsp dark soya sauce
4 cups water
2 pcs cinnamon stick
2 pcs star anise
4 cloves  garlic

Ingredients : 
2  pork tongue
1 tbsp shao xing cooking wine
1/2 tsp salt
4 pieces firm tofu
3 hard boiled eggs - if you like
1  pork tenderloin -marinated with 1/2 tsp salt & pinch of black pepper

1 packet rice noodle - kway teow
To Garnish :
4 shallots - sliced and fried in some oil  
some chopped green onions

Method :
Marinate the pork ribs, pork tongue, pork tenderloin  and lean pork with the salt ,shao xing wine and black pepper in the fridge overnight or at least 6 hours. Boil some water to cook the eggs.
Bring the water to a boil in a large stockpot and then add the spices and garlic into it together with the pork ribs, pork tongue  and lean pork. Add the light soya sauce , dark soya sauce, salt and black pepper to taste. Add the hard boiled eggs and  firm tofu too.
Bring to a boil and then lower the heat to simmer for 2 hours. After one hour , add the pork tenderloin to cook it through.
Dish up the pork tongue, pork tenderloin , eggs and firm tofu to another plate to slice them before serving.
Bring a pot filled with some water to boil to cook the rice noodles till soften. Scoop them out and pour some pork soup into each bowl. Add some fried shallots on the top with some chopped onions. Serve hot immediately with the pork tenderloin  slices , pork tongue slices , eggs and tofu.
