Love Letters (Kuih Kapit)

Mmm.....thinking about Chinese New Year goodies reminds me of this traditional cookie from Malaysia which is made by using kuih kapit moulds and charcoal stove....there is another name for this kuih and it is called love letters as it is rolled like a cigar shape and it looked really secretive as back in the olden days, people used to roll their love letters like that to give it to their loved ones or secret admirers......it is kind of difficult to make it here in Canada as we do not have the charcoal stove but I manage to buy a kreme kake baker which makes Norwegian thin cookies that can do the trick......you can use a waffle cone maker too for a thin kuih kapit....
It is nice this year as Valentine's Day falls on February 14th and it is the same day as Chinese New Year. I was thinking of making these love letters as a perfect gift for every loved ones that I have....There are many ways to present the love letters and one of it is to roll them like cigars ....I prefer to fold them as shown in the photo below....
Kuih Kapit is part of Nyonya food and Malay food, so that makes it part of Malaysian food. The Penang Nyonyas and Malays have perfected their skills to made this Nyonya cookies or biscuits into a novelty.


   Love Letters/ Kuih Kapit


Love Letters / Kuih Kapit
Ingredients :
4 oz plain flour
4 oz rice flour
2 tsps cornflour
4 eggs
8 oz  sugar   
8 fl oz water
12 fl oz thick coconut milk

Method :
Sift the 3 flour together twice using a sifter and place it in a bowl to set aside. Beat the sugar , water and eggs together till fluffy and creamy. Add the coconut milk to the mixture and stir well. Then fold in the flour little by little gently and till combined well. Heat the kreme kake baker or waffle cone maker till the light indicator is red. Then scoop a tablespoon of the mixture onto the moulds. Press down and close the baker to cook it till it is ready. The light indicator would tell you when the kuih kapit is cooked. Roll it immediately into long cigars or fold it into a flat cone shape as shown in the photo below. Repeat till all the mixture is used up and leave the kuih kapit to cool before storing in an air tight container.
