Baked BBQ Pork Buns


Barbecued pork has always been my family's favourite dish and we would pick some pieces to eat when mum was slicing it .....I love to make some baked bbq pork buns when I was younger as my mum taught me how to from her old recipe book...I made some adjustments over the years and substitute the lard with vegetable oil for a lighter version for my family and it is still crispy and delicious.....

Baked BBQ Pork Buns
Ingredients : Filling
8oz bbq pork / char siew - chopped finely
2 shallots - minced finely
2 garlic - minced finely
1/2 tsp sesame oil
1 tsp Shao Xing chinese cooking wine
2 tsps sugar
1/2 tsp salt  & black pepper to taste
3 green onions- chopped finely
1  egg  yolk (egg wash)

Method :
First heat a frying pan with some olive oil and fry some minced garlic and shallots till fragrant. Then add the chopped char siew(bbq pork) and stir fry for about 2 minutes. Add some chinese cooking wine and salt , sugar and sesame oil. Add the chopped green onions and some black pepper to taste. Dish it up and set aside to cool.

Ingredients : Pastry
Pastry A
16 oz plain unbleached flour
2 fl oz vegetable oil
5  fl oz water
1 tbsp sugar

Pastry B
11 oz plain unbleached flour
5 fl oz vegetable oil

Method : Pastry A
Mix the sifted flour together with the cooking oil , sugar and water in a large bowl. Then knead the dough into a soft texture. Cut into 15 pieces.
Method : Pastry B
Mix the flour and cooking oil together and knead into a dough and cut into 15 pieces.
Press dough "A" into round pastry and place dough "B" inside the dough and wrap it up neatly. Use the rolling pin to roll it flat and then fold and roll it again and repeat 3-4 times. Roll into a round pastry about 1/4" thick.
Put two  teaspoons of filling in the centre of the pastry and seal the opening using your fingers to crimp it like a pau.
Preheat the oven to 400 F .
Line the baking sheet pans with some parchment paper. Place the buns on the baking sheet pans about 2 inches  apart . Brush all the buns with some egg yolk and bake them in a preheated oven for about 30-35 minutes depending on your oven.
