Lemon Sweet N Sour Pork

My son loves to eat sweet and sour pork since he was a toddler and I had changed the original recipe for this recipe to a more healthier one by replacing the tomato sauce to lemon sauce...and fortunately he still loves it and everyone in the family loves it too....Here is the special recipe which I love and my son loves it too....

Lemon Sweet N Sour Pork
Ingredients :
2 pork tenderloins   - slice thinly about 1/4 inch diagonally
1/2 tsp salt
1/4 tsp black pepper
1 egg - beaten
1 cup rice Krispies  
2 shallots - chopped finely
2 cloves garlic - chopped finely
1 cucumber - cut into small chunks
4 ripe tomatoes - cut into quarters
1 can pineapple slices  -cut into cubes
1 large lemon juice
1 tbsp corn starch mix with some water

Method :
First slice the tenderloins into thin slices and then marinade it with some salt and black pepper.Set it aside for about 4 hours or overnight in the fridge.
Preheat the oven to 400 F.
Add the beaten egg and then coat the pork slices with some rice krispies. Arrange them on a lined baking sheet pan and bake them in the oven for about 25-30 minutes till golden brown. Remove from the baking pan and leave to cool on the wire rack.
Cut the cucumber, pineapple slices  and tomatoes into smaller pieces and then heat a large frying pan. Add some olive oil and fry the chopped garlic and shallots till fragrant. Add the cucumber , tomatoes and pineapple cubes into the pan and stir fry for about 2 minutes. Add the cornstarch water and lemon juice and bring to a boil till the sauce thickens.
Ladle the vegetables and pour it on top of the crispy pork tenderloin slices and serve over steam rice or egg noodles.
