Prawns And Scallops Couscous Salad



My son loves to eat prawns and couscous and I was thinking it would be nice to put them together with this easy weekday dish and no fuss to make it on a busy weekday night......I even added some scallops to it and it is really delicious if you top it with some crunchy bacon on top of it....


Prawns And Scallops Couscous Salad 
Ingredients : 
1 lb prawns - shells removed except tails 
4 oz baby scallops 
1 tsp salt 
1/4 tsp black pepper  
olive oil
1 cup couscous 
2 cups hot water 
1 cup baby spinach 
2 shallots - minced 
2 cloves garlic - minced 
To garnish : 
3 stalks green onions - chopped
8 strips crispy bacon   


Method : 
Pour some hot water to the couscous in a large bowl and then cover it with for about10 minutes. 
First heat the wok and then add some olive oil  to fry the minced shallots and garlic till fragrant.
Add the prawns and scallops to cook for about 8 minutes till they are cooked through.. Add some salt and black pepper to taste. Toss in the baby spinach to wilt a little for 1 minute. Then fluff up the couscous with a fork and add the prawns scallops mixture to it to mix well. Garnish with some chopped green onions  and strips of crispy bacon. Serve immediately as a main or side dish for your next party. Enjoy !!!
