Better Turkey Pot Pie


I know that Christmas and Thanksgiving is over but I wanted to share a great recipe for your leftover turkey meat the next time you cook a whole turkey.......as this recipe uses all the parts of the turkey and it is good for you too....as it tastes delicious.....you can sneak in some fresh root vegetables such as parsnips, carrots, potatoes and celery....

Better Turkey  Pot Pie 
Ingredients : 

Pastry Dough
 3 cups whole wheat flour 
1 tsp salt 
1 tsp baking powder 
8 tbsps cold unsalted butter 
8 tbsps cold margarine 
1/2 cup ice water 
1 egg wash 

Filling:
2 cups leftover turkey meat - diced
4 medium carrots - diced 
4 stalks celery - diced 
1 cup green peas 
2 large red potatoes - diced and parboiled till slightly tender 
2 shallots - minced 
2 garlic - minced 
1/2 tsp salt 
1/4 tsp ground black pepper 
1 tbsp olive oil 




Method : 
First cut the potatoes into small dices and boil them in a pot of boiling water till slightly tender. Set aside. 
In a large bowl, put the whole wheat flour, salt and baking powder in it. Then add the cold butter and margarine into the bowl. Using your fingers or a pastry cutter, cut the butter and margarine till it is pea sized crumbs. Then stir in the ice water into the dough. Knead till it forms a round dough. Put it in the fridge for at least 1 hour.
Heat a non stick pan and add some olive oil to fry some minced shallots and garlic till fragrant. Then add the carrots and celery to fry for another 5 minutes. Add the diced potatoes and green peas to stir fry for 3 minutes. Add the salt and ground black pepper. Dish the filling  into a rectangular dish about 12 " x 9 " x 2 ".
Preheat the oven to 375 F . 
Roll out the pastry dough to  11" x 8"thick  and put it on top of the filling. Brush some egg wash on the pastry before baking it in the middle of the oven for about 1 hour 15 minutes.
