Easy Baked Beef Macaroni And Cheese 


My son loves to eat macaroni and cheese and here is a recipe which I had tweaked and changed for us with some mixed vegetables including broccoli and carrots added into the macaroni for a healthier version.....I still put some grated cheese ...I love to put a mixture of parmesan cheese and cheddar cheese as it creates a nice texture and tastes good....


Easy Baked Beef Macaroni And Cheese 
Ingredients : 


16 oz minced sirloin beef 
1/2 tsp salt 
1/4 tsp ground black pepper 
8 oz chopped carrots 
8 oz green peas 
8 oz grated cheddar cheese 
8 oz grated parmesan cheese 
2 cups macaroni 
4 cups water 
salt and black pepper to taste
1 tsp dried oregano 
1 tsp dried basil 
3 shallots - minced
2 garlic - minced 


Bechamel Sauce 


2 oz butter 
1/2 cup flour 
4 cups 2 % milk 
salt & ground black pepper to taste 
pinch of nutmeg 




Method : Bechamel Sauce
First heat a large stockpot and add  2 oz butter to melt before adding the 1/2 cup flour to cook the roux.Cook for about 2 minutes before adding some milk and whisk quickly to prevent lumps. Cook till the bechamel sauce thickens. 


Method : 
Marinade the sirloin beef with salt, ground black pepper , oregano and basil and put it in the fridge.First boil the 4 cups of water in a large stock pot with some salt. When the water boils , add the 2 cups of macaroni to cook for about 8 minutes till al dente. 
Heat a large wok and add some olive oil to fry minced shallots and garlic till fragrant. Add the minced beef to fry till cooked through. Add the chopped vegetables and cook for 2-3 minutes with some salt and black pepper to taste. Add the cooked macaroni with the bechamel sauce into the wok and mix well till incorporated.
Preheat the oven to 400 F. 
Pour the macaroni mixture into a rectangular dish and sprinkle some cheddar cheese and parmesan cheese on top of it. Bake the macaroni in the oven for about 45 minutes till it is golden brown.
