Stickylicious Fusion Spare Ribs

Well, I got some inspiration from my visit to one of  the local famous ribs restaurant in JB recently when my best friend and I had visited. We had ordered a slab of their famous ribs and I thought of making my own at home but with a cheaper cut of spare ribs instead. The ribs that was served at the restaurant was Bali's version , I made these with a fusion twist and surprisingly it tasted delicious according to my best friend who was lucky to be able to try it.

Stickylicious  Fusion Spare Ribs 
Ingredients : - 

1 kg spare ribs  - cut into 2 inches pieces 
1 tsp salt 
1 tsp black pepper 
2 tsps light soya sauce 
2 inches young ginger - chopped finely
4 cloves garlic - chopped finely 
2 shallots - chopped finely 
5 spring onions - sliced 
8 sprigs of cilantro leaves 
400 ml water 

2 tbsps cornstarch  and 100 ml water 

Sticky Ribs Sauce  
Ingredients : - 

2 tbsps mirin 
2 tbsps honey 
1 tbsp dark soya sauce 
1/2 cup tomato ketchup 
2 tbsps brown sugar 
2 tbsps apple cider vinegar 
2 tbsps Worchestershire sauce 
4 tbsps Hua Tiao Chinese Cooking Wine 
a little black pepper 

Method : - 
First marinade the spare ribs with salt ,black pepper and soya sauce overnight or at least 6 hours . Heat up a wok and add some cooking oil into it . Brown the ribs till golden brown on all sides for 5-10 minutes.  Take it out and put on a dish and set aside. Add some oil and saute the  shallots . then garlic and ginger till fragrant. Add the spare ribs into the wok and add the sticky ribs sauce except  the cornstarch mixture . Bring the ribs to a boil and then lower the heat to low and simmer for about 45 minutes till tender. 
Add the cornstarch mixture and increase the heat to medium. Keep stirring the ribs to make sure that the sauce thickens. Taste and adjust flavours  if neeeded. Add the spring onions and cilantro leaves . Dish it out and serve immediately with rice or pasta .
