Lattara's Simple Nasi Lemak 
Ingredients : - 

Ingredients for the coconut rice : - 

1 cup  Basmati rice 
1 1/2 cups water 
4 pandan leaves - tied into a knot 
1/2 cup fresh coconut milk 
1/2 tsp salt 

Method : - 

Wash the rice and put it in a pot together with the water , coconut milk , pandan leaves and salt . Bring it to a boil and then lower the heat to medium and cook the rice uncovered till cooked. 


Ingredients for the anchovies sambal : - 

200 gms dried anchovies 
5 shallots - chopped finely 
4 cloves garlic - chopped finely 
4 red chillies - pounded  finely 
4 dried chillies - pounded finely 
1 cup fresh coconut milk 
2 large red onions - sliced thinly 

Condiments : - 
1 large Japanese cucumber - sliced thinly diagonally 
200 gms fresh toasted peanuts  

Method : - 
First heat up a large wok on medium heat and then add some cooking oil into it. Saute the shallots and garlic till fragrant for about 5 minutes. Then add the pounded chillies and fry for till fragrant about 5 minutes, add the dried anchovies to saute till light brown. Then add the sliced red onions to the wok and saute for a few minutes before adding the coconut milk. Simmer on low heat for about 10 minutes. Then serve it hot with the coconut rice , cucumber slices and toasted peanuts. 
If you like, you can  add a fried egg as a condiment . 😋
