Barbecued Pork (Char Siew)

We love to eat char siew in our fried rice or have it with some crusty buns like a sandwich...so I decided to find a recipe that I can make it at home.....so here is a version of the famous chinese deli's barbecue pork or better known as char siew in cantonese from my kitchen to yours.....nothing beats some chinese style bbq pork.....I have changed a little to suit our taste and it is healthier when you use pork tenderloins.....in this recipe....

Barbecue Pork (Char Siew)
Ingredients:

3 pork tenderloins -cleaned and pat dry
1/2 tsp salt
1/4 tsp black pepper
2 tbsps black soya sauce
2 tbsps Shao Xing chinese cooking wine
1 tsp sesame oil
2 tbsps brown sugar

Method :
Marinade the pork tenderloins with salt,black pepper, black soya sauce, shao xing chinese cooking wine,sesame oil and brown sugar overnight in the fridge. Remove from the fridge to come to room temperature before baking it in the oven.
Preheat the oven to 400F/ 200C.
Line a baking pan with some aluminium foil and put a roasting rack in it. Lay the pork tenderloins on the rack and bake it for about 45-50 minutes. After it is baked , cover it with some aluminium foil and leave it to rest before slicing it thinly to serve. 

Char Siew Sauce 
2 shallots - minced 
2 garlic - minced 
2 tbsps thick dark soya sauce or soya sauce paste

2 tbsps Shao Xing chinese cooking wine 
1 tsp sesame oil 
1/4 cup water 
1 tbsp honey 

Method :
First heat a non stick frying pan over medium heat and add the sesame oil. Fry the minced shallots and garlic till fragrant and slightly brown. Add the rest of the seasonings and bring to a boil till

the sauce thickens. Pour it on  the slices of char siew and serve warm.
