Chocolate had been one of the top favourite gifts for Christmas among our families and friends and these chocolate thumbprints cookies are one of the home made gifts that I would make for my friends as they are easy to make and delicious to eat as well.....this year I made some for my family and some friends too....but it will usually finish before Christmas arrives and we would leave some for Santa every year as he loves these cookies.....
Chocolate Thumbprints Cookies
Ingredients:
8 oz margarine plus 6 tbsps margarine
8 oz icing sugar
1/4 tsp salt
2 tsps vanilla extract
20 oz unbleached plain flour
6 oz milk choc chips - melted with 1 tsp milk
Method :
Preheat the oven to 350 F/ 180 C.
Beat the margarine with the icing sugar,salt and vanilla extract for about 2 minutes. Beat in the flour till combined. Use a small melon baller and scoop some dough and roll with your hands to a round ball. Press with the back of the wooden spoon and make an indention in the middle and place them 1 inch apart. Bake the cookies for 10 minutes and then press them down in the centre with your thumb.Rotate the baking sheet pans and return to oven for another 7 to 9 minutes more. Transfer to wire rack and cool completely.
In a small bowl, combine the milk choc chips and milk and put in the microwave for 20 seconds to melt it. Stir well and then fill all the thumprints cookies with the melted chocolate. Set aside to firm on a wire rack before storing in an air tight container.
