Crispy Baked Chicken Drumsticks

I use to love to eat deep fried chicken but  I grew older , I began  to be more health conscious and opted for a lower fat eating  lifestyle. Having said that I started to borrow some books on low fat cooking and began on an adventure to create and change old traditional recipes which had a lot of fat in it ....by changing the ways of old method cooking ....instead of deep frying the chicken thighs I baked them in the oven...I use chicken drumsticks for this recipe as it is more flavour and remove the skin to coat the drumsticks in some egg wash before coating them in crushed corn flakes for the crispy and crunchy texture.....so it is healthier for everyone to eat...even kids love them as it is easy to eat......
Here is my take on crispy chicken which is not deep fried and the secret to a crispy crunchy texture of the chicken is a hot oven and the crushed cornflakes....try this recipe as it is a keeper for sure...enjoy...bon appetit.....

Crispy Baked Chicken Drumsticks
Ingredients :
12 skinless chicken drumsticks
1/2 tsp salt
1/4 tsp black pepper
1 egg - beaten
1 cup crushed cornflakes

Method :
Preheat the oven to 400 F/200 C .
Remove the skin from the chicken drumsticks  and marinade them with salt and black pepper overnight in the fridge. Remove from the fridge to come to room temperature before coating them with some egg wash and then the crushed cornflakes. Arrange the chicken drumsticks on a baking sheet pan lined with parchment paper. Bake at 400 F/200 C  for about 45 minutes till they are golden brown and crispy. Leave them to cool a little before serving. Serve it with your favourite coleslaw or potato salad.
