Crispy Sesame Cookies


We have some cookies like these in our house since we love to eat sesame seeds and we love to eat these as they are crispy and I had adapted this recipe from Martha's cookies cookbook....it had been with us for a while not only for Christmas but also for Chinese New Year too....it is simple and tasty to make these cookies and I love the texture of the crunchy and crispy cookie in this recipe.....

Crispy Sesame Cookies
Ingredients :
3 1/2 oz unhulled sesame seeds
11 oz unbleached plain flour , plus more for hands
1/2 tsp baking powder
pinch of salt
6 oz unsalted butter / soft margarine at room temperature
6 oz sugar
1 large egg
1/2 tsp vanilla extract

Method :
Preheat oven to 350F / 180C. Line two baking sheet pans with some parchment paper.
Fry some sesame seeds till fragrant in a dry pan for 3-5 minutes. Let it cool .Coarsely grind the remaining of the sesame seeds and set aside. Sift the flour,baking powder and salt in a mixing bowl. Whisk in the sesame seeds.Beat the butter / soft margarine and sugar on medium speed till light and fluffy and add eggs and vanilla extract and beat till combined.Add the dry ingredients slowly and mix on low speed till mixed.Transfer dough to a clean surface and knead till smooth. Shape a tablespoon of dough into a slightly flattened ball about 2 inches in diameter.Repeat placing cookies on baking sheets for 2 inches apart and bake them  till lightly brown for about 18-20 minutes.
Rotating the baking sheets halfway through and transfer cookies to wire rack to cool. Cookies can be stored between layers of parchment paper in an air tight container at room temperature up to a week.
