Joyous Pinwheel Cookies



It would not be Christmas if we do not have  these pinwheel cookies...and these are one of my favourite cookies for cookie swap or as gifts to close friends....and also relatives.....I had learned this recipe from the internet and made some changes in the original recipe by adding some cocoa powder to the first dough to make it look a little light brown instead of yellow...and keep the inside more chocolate colour with the rest of the cocoa powder.....it looked a little different....and nice....kids love these cookies as they looked like pinwheels toys....

Joyous Pinwheel Cookies
Ingredients :
4 oz butter
6 oz  icing sugar 
1/2 tbsp vanilla extract 
2 fl oz milk
12 oz unbleached plain flour 
1/2 tsp salt 
1/2 tsp baking powder 
2 oz cocoa powder 


Method : 
Cream the butter with the icing sugar and vanilla extract in a bowl with a wooden spoon. Then add the milk and flour,salt and baking powder into the butter mixture and mix well. Then divide the dough into 2 equal portions. Put a small teaspoon of cocoa powder in the 1st dough and mix well till it is light brown  Add the rest of the cocoa powder into the 2nd dough and mix well till combined. Wrap each dough in plastic wrap and put in the fridge to chill for at least 1 to 2 hours. Unwrap the chilled light brown dough and cover with plastic wrap and roll it into a rectangle. Roll the other brown dough into a rectangle too and then place it on top of the light brown dough and starting from the opposite side , lift the light brown dough by the plastic wrap underneath it, snugly roll up both layers into a log just like a swiss roll and then wrap the roll with some plastic wrap and refrigerate for at least 2 hours. 
Preheat the oven to 350 F / 180 C. Line 2 baking sheet pans with some parchment paper and slice the log into 1/4 inch thick rounds. Arrange the slices on the parchment about 1 inch apart and bake it for about 13 minutes.When they are done they are still little soft to the touch and please don't overbake. Let it cool in the baking sheet for 1 minute before cooling them on the wire rack.
