Lattara's Family Butter Cookies



My family has twelve favourite cookies for Christmas and I have started making them one by one usually twelve days before Christmas. Two days ago, we had started making some butter cookies and it is a tradition in our home as it was passed down by my mum....to me....and I am passing it to my son....we made them together each year and would make some for his friends and teachers at school....I had changed the amount of butter and it is not too much.....these cookies are a twisted version from the traditional buttery cookies which you can buy from the supermarkets.....they are not too sweet or too buttery to eat....so you can savour these without feelin' guilty......yippee!!!


Lattara's Family Butter Cookies
Ingredients :
1 1/2 cup unbleached plain flour
1/2 cup wheat bran 
1 tsp baking powder 
1/4 tsp salt
8 oz butter
1 cup icing sugar 
2 eggs 
1 tsp vanilla extract 
some large / medium Christmas cookie cutters

Method : 

First mix the butter , flour and salt together to resemble breadcrumbs with two forks. Beat the eggs, vanilla extract and icing sugar in another bowl till combined. Add the egg mixture into the flour and gently mix till incorporated well. 

Mix till the dough forms a round ball and then wrap it with some plastic wrap and refrigerate for 2 hours or overnight till it is chilled. 
Line 2 baking sheet pans with some parchment paper. Preheat the oven to 350F/ 180C. 
Roll out the dough to 1/8 inch thick  and then cut out using your favourite christmas cookie cutters. Arrange the cookies at  2 inches apart on the baking sheet and bake them for about 15 minutes till they are slightly brown at the edges.
