Lattara's Christmas Fruitcake


Another traditional cake in my family is fruitcake and I love this recipe as it is not too sweet and loaded with lots of dried fruit and chopped nuts...we love almonds..so I had changed my mum's old recipe of her fruitcake and made it my own with some toasted chopped almonds and dried raisins , golden sultanas and dried cranberries ....here is my twisted version of a  traditional fruitcake recipe....with a hint of rum.... enjoy baking it......





Lattara's Christmas Fruitcake
Ingredients :

10 oz unbleached plain flour
2 oz wheat bran
1/4 tsp salt
1 tsp baking powder
6 oz unsalted butter - room temperature
4 oz dark brown sugar
3 eggs
6 fl oz milk
4 oz dried sultana  raisins
4 oz dried golden raisins 
4 oz dried cranberries 
4 oz chopped toasted almonds
1 tsp vanilla extract
2 tbsps rum

Method :

Bake the almonds in the oven at 350 F for about 15 minutes till slightly golden brown and fragrant.
Sift the flour , wheat bran , baking powder and salt together and set aside.
Preheat the oven to 350F / 180 C. Soak the dried fruits with 1 tablespoon of  rum in a bowl.
Beat the butter till light and add the brown sugar to beat till fluffy and creamy. Add the eggs one at a time and beat till combined. Add the soaked dried fruits and then gradually fold in the flour mixture alternately with the milk. Stir with a wooden spoon and add the rum till just combined.Pour into a baking loaf pan or two small loaf pans to bake in the preheated oven at 350 F for about 45 minutes to 1 hour till the toothpick comes out clean after inserted into the centre of the cake.
