Oatmeal Raisin Cookies



I love the taste of raisins in cookies and also oats  for my breakfast cereal so I match them in this cookie recipe and make it my very own cookie recipe .....This is one of my favourite cookies among the twelvedifferent cookies that we have at home and I can eat this all day.....they are not too sweet but nice and crunchy  if you bake them 2 minutes more in the oven and let them cool completely on the wire rack......
This recipe is adapted from Christine Cushing's recipe and I love the texture of the golden and crispy oatmeal cookies.....


Oatmeal Raisin Cookies
Ingredients :
8 oz unbleached plain  flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
6 oz unsalted butter / margarine , at room temperature
6 oz cup packed light brown sugar
1 teaspoon pure vanilla extract
4 1/2 teaspoons milk
1 large egg, at room temperature, lightly beaten

10 oz  old fashioned rolled oats
4 oz raisins, soaked in hot water until plump, drained, and squeezed dry

Method :
In a medium bowl sift the flour, baking powder , baking soda and salt and set aside.Beat the butter and sugar till light and fluffy. Add vanilla extract , milk , egg and mix well. Add flour mixture and beat till just combined. Then mix in the oats and raisins. Put the dough  into the fridge to chill for 1 hour.
Preheat the oven to 350 F and line two baking sheet pans with some parchment paper.
Scoop out 1 tablespoon  of  dough and roll them into balls , put them on the baking sheet pans 3 inches apart. With your hands , flatten them a little. Bake the cookies , rotating halfway through baking about 18 to 19 minutes.
Transfer the cookies to a wire rack to cool completely , at least for an hour.
