Well we love to eat butter buns with our stew and I have found a good recipe which makes tasty and fast dinner buns with less butter and easy on the waistline.....so we can have 2 or more buns.....this is a recipe adapted from the baking cookbook of Good Housekeeping but a twsited version of their dinner buns.....I always make a batch and bake them before dinner time to serve them with a pot of warm stew or roast chicken......they are good for breakfast too.....
Portuegese Dinner Buns My Way
Ingredients :
1/2 cup warm water (105 F)
2 tsps active dried yeast
1 tsp plus 1/3 cup sugar
3/4 cup milk - heated to lukewarm (105F)
4 tbsps softened margarine or butter
3 cups unbleached plain flour plus a little more flour for dusting
3/4 cup wheat bran
1 tsp salt
2 eggs
Method :
In a large bowl , combine warm water, yeast and 1 tsp sugar and stir to dissolve. Let it stand for 5 minutes till foamy. With a mixer on low speed , beat the soft butter / margarine , warm milk, 1/2 cup flour , remaining 1/3 cup sugar, salt and eggs to make a thick batter , continue to beat for 2 minutes ,scraping bowl often. Gradually stir in 3 cups of flour to make a soft dough .
Turn the dough onto a lightly floured surface and knead about 10 minutes till smooth and elastic,working in the remaining flour and 3/4 cup wheat bran as neccesary to keep the dough from sticking. Shape the dough into a ball and place it in a greased large bowl and cover the bowl with plastic wrap to rise for about 1 hour.
Punch down the dough and turn onto lightly floured surface , cover to let it rest for 15 minutes. Grease 2 baking sheet pans and preheat the oven to 350F / 180C.
Cut the dough into 12 portions or 24 smaller portions and shape them into round balls with your floured hands. Place each ball onto the baking sheet about 2 inches apart. Let the buns rise for another 30 minutes .With a small sieve , dust some flour on top of each ball to make them look like portuegese buns. Bake them in a preheated oven at 350 F/ 180 C for about 25-30 minutes till they are golden brown. Serve warm or let them cool on wire rack to serve later.
