Double Chocolate Choc Chips Biscotti
Ingredients : -
2 cups all purpose flour
2 tsps baking powder
4 oz Dutch cocoa powder
4 oz unsalted butter , softened
2 eggs
1 cup castor sugar
1 cup dark chocolate chips
1 tsp pure vanilla extract
Method : -
Preheat the oven to 350 F. Line a large baking sheet with parchment paper.
Sift the flour , baking powder , cocoa powder into a large bowl and set aside. In a mixer bowl, cream the butter with castor sugar till smooth. Add the eggs , vanilla extract and dark chocolate chips and then fold in the flour mixture with the cocoa powder and baking powder. Blend well and then spread the dough into two medium logs on a prepared baking sheet.
Bake until set and biscotti logs are firm to the touch and golden , about 30 minutes. Remove biscotti from oven and let it cool for 15 to 30 minutes. Reduce the oven temperature to 335 F. After the logs are cooled, use a long serrated knife , slice the logs on the diagonal into 1/2 to 3/4 inch thick slices.
Arrange them on the baking sheet pan and bake the biscotti a second time to dry and crisp them about 30 minutes , turning them once for ensure even baking on both sides at 15 minutes.
Let them cool on the baking sheets before storing them in air tight containers.
