Prawns With Scallops Orzo


This pasta dish was our main course for the X'mas eve dinner and simple yet elegant to serve to your friends if you have company one day unexpectedly....we love it as it has prawns and scallops in it and they are fresh and sweet with the pasta.....my son loves the bay scallops as they are sweet and tender .....one tip to cooking scallops is not to fry them too long.....just a few minutes....and the pan has to be hot .....

Prawns With Scallops Orzo
Ingredients :

2 lbs black tiger prawns - cleaned
pinch of salt
1/4 tsp black pepper
1 tbsp shao xing chinese cooking wine
3 cups orzo
4 shallots - chopped
2 cloves garlic - chopped
8  pitted black olives
1 lb bay scallops - rinsed and cleaned
some chopped parsley

Method :
Marinade the prawns and scallops with some salt, black pepper and shao xing wine and set aside in the fridge for 20 minutes. Then, boil 4 cups of water to cook the orzo according to the package instructions. Then drain the cooked orzo and set aside. Heat a large non stick frying pan over medium heat and add a tablespoon of olive oil into the pan to fry the chopped shallots and garlic till fragrant. Add the tiger prawns and fry for about 5 minutes.Add the bay scallops and fry for another 3 minutes till the prawns turn red. Add the cooked orzo into the pan and stir fry for 1 minute. Add the chopped parsley and then dish it out onto a serving dish. Garnish with the olives and some cilantro leaves. Serve it immediately with mixed green salad.
