My son's birthday party was a success and I had attempted to make a homemade cake this year as we were not so fond of the cakes from the bakery as they are too sweet and have too much icing....moreover he wanted a number 8 for his cake...so I made this chocolate cake using two round baking pan and cut a small hole in the centre to make the number 8. Here is the chocolate cake and I made a chantilly cream frosting for the top of the cake.
Number Eight Cake
Ingredients :
20 oz all purpose flour
4 oz corn flour
6 tbsps cocoa powder
4 tsps baking powder
1 tsp baking soda
pinch of salt
2 eggs
14 oz castor sugar
8 oz unsalted butter - room temperature
10 fl oz milk
1 tsp vanilla extract
Method :
Preheat the oven to 350 F / 180 C.
Sieve all the flour , baking powder , baking soda and salt and cocoa powder in a large bowl and set aside. Grease 2 8 inch round baking pan with some butter and line them with some parchment paper at the bottom of the pan.
Beat the butter till light and then add the castor sugar to beat till fluffy for about 5 minutes. Add the eggs one at a time and beat till mixed well. Add the flour mixture and milk alternately and fold it gently till incorporated well. Add the vanilla extract and then gently fold it into the batter. Divide the cake batter into two portions and pour them into the 2 baking tins. Bake the cakes at 350 F for about 45- 50 minutes till the toothpick comes out clean after inserted in the centre of each cake.
Leave the cakes to cool on a wire rack after taking them out from the oven before putting the icing on the cake.
French Chantilly Cream
Ingredients :
3 cups whipping cream
4 oz icing sugar
1 tsp vanilla extract
Method :
Beat the whipping cream,icing sugar and vanilla extract at high speed till light and fluffy for about 10 minutes.
Spread with a spatula onto the cake after cutting a round hole in the centre of the cake to make the number EIGHT as shown in the photo below. Decorate with some candies of your choice such as coloured chocolate candies......
