Orange Kuih Ang Koo (Orange Steamed Turtle Cakes)

Well, it was my  son's birthday and I made some orange kuih ang koo for him as it is his favourite Malaysian snack and it is usually made for someone's birthday back in my hometown......the tradition is among the Teochew family and it is my son's favourite snack so I made it for him.....and of course for the whole family too....it is different from the traditional one as it is coloured with red food colouring where my ang koo is orange in colour from the sweet potatoes (yam) which they call it here in North America......natural colour and my son's favourite colour too.....Here is my version of the ang koo kuih for all of you out there to try....
Here is the recipe....

Orange Ang Koo Kuih
Ingredients :
Skin :
12 oz glutinous flour
3 tbsps tapioca flour
4 oz sweet potatoes
3 tsps corn oil
3/4 cup hot water

Filling :
6 oz green  beans without skin (yellow mung beans), washed and soaked for 4 hours , steamed and mashed
1 tsp vegetable oil
4 oz sugar
pinch of salt

1 piece banana leaf , cut into oval shapes to line the angku
1/2 cup of cooking oil to brush the skin and the banana leaf

Method :
To Make Filling :
Add the mashed green beans in the wok with the sugar and stir fry till slightly dry about 10 minutes. Remove and set aside to cool. 
To Make The Skin:
Mix the glutinous flour ,  tapioca flour,corn oil and sweet  potatoes and knead all the ingredients till it forms a pliable dough. Divide into about 12 round balls.(Depending on the size of the ang koo mould)
Wrap pu one part of the filling with one part of the skin and press into the ang koo mould and knock it out gently. . Line with a piece of a greased banana  leaf  and continue to finish the rest of the skin and filling. Heat a wok with some water to steam the angkoo at high heat for about 5 minutes.
Remove all the ang koo and brush them with some cooking oil.
