Mmm.....we have a double celebration this year for our Chinese New Year and Valentine's Day as it falls on the same day and I had made some V day chocolate cookies for my son's classmates....We had given to them in small cute celophane bags printed with lots of hearts in pink and red......oh....they looked so nice and cute .....and tastes great too.....crispy and chocolaty too....with some good dutch processed cocoa powder....I think that good quality cocoa powder plays a big role in your baked goods such as cookies and in this recipe I use Callebaut cocoa powder which costs about $5-00 a pound and it gives the cookie a great aroma when it is baking in the oven....and a rich chocolate taste when you bite into each cookie......mmmmmmmmmmm......try it and you would love it.....as much as my whole family loves it......bon appetit.....
Valentine Chocolate Cookies
Ingredients :
2 cups unbleached all purpose flour + 4 oz plain flour
4 oz sifted Callebaut cocoa powder
1 oz wheat bran
1/2 tsp salt
8 oz unsalted cold butter - cut into small cubes
2 eggs
8 oz icing sugar
1 tsp vanilla extract
Method :
First mix the flour , wheat bran , salt , cocoa powder , icing sugar and cold butter with two forks. Mix them till the mixture resembles small bread crumbs. Beat the eggs and add into the mixture and mix well till incorporated and it forms a dough. Then wrap the dough with some plastic wrap and refrigerate for at least 2 hours or overnight.
Preheat the oven to 350 F / 180 C.
Take the dough out and place it on the counter for 5 minutes. Roll it out on a floured board at about 1/8 inch thick and cut it into heart shaped cookies using a heart shaped cookie cutter. Place them about 1/2 inch apart and bake them in lined baking sheet pans for about 15 minutes at 350 F. Remove from the oven and cool them on racks before storing them in an air tight container.
