Almond Cookies

These cookies were created as I had tasted some almond cookies from a famous shop in Malaysia during Chinese New Year and they were filled with a nice almond taste and smells great too...I thought about changing my peanut cookies recipe to an almond cookies and did some changes in the amount and made a few times to a perfect recipe now...I was so happy that I had finally created this recipe as I had missed eating the almond cookie during the lunar new year.....so here it is the famous  almond cookie from my hometown.....


Almond Cookies
Ingredients :

14 oz plain unbleached flour
2 oz cornstarch
12 oz toasted ground almonds
8 oz soft butter -  room temperature
8 oz icing sugar
1/4 tsp salt
2 tsps milk

Method :
Toast the almonds in the oven at 350 F for about 15 minutes till it is light brown. Grind the almonds till they are fine in a food processor. Mix the soft butter, icing sugar, milk, the flour mixture, salt and ground almonds together in a large bowl with your fingers till it forms a dough.
Preheat the oven to 350 F. Line baking sheet pans with some parchment paper and set aside.
By using a teaspoon scoop a little of the dough and use your hands to make round small balls.Flatten the balls slightly with your thumb as shown in the photo below. Arrange them about 1 inch apart on the lined baking sheet pans and bake them for about
18-20 minutes at 350 F/ 180 C.
