Chicken And Mushrooms Stew


Spring has finally arrived but the weather is a little wet this week and we always love stews in our home...it is always good to make a big pot of stew when it is raining outside.....I love this simple chicken and chinese mushrooms stew as it is a very comforting dish to eat with some french garlic bread on the side or a bowl of plain steamed rice is also great.....serve this dish with some french beans with some garlic....yummy.....my son loves this dish a lot with the gravy on the rice................

Chicken And Mushrooms Stew
Ingredients :
1 whole chicken - cut into 10 small pieces
1/2 tsp salt
1/4 tsp ground black pepper
1 tbsp Shao Xing chinese cooking wine
8 chinese mushrooms - soaked in hot water
4 cloves garlic - minced
4 shallots - minced
4 cups water
2 tbsps dark soya sauce
2 tbsps light soya sauce Method :
First clean the chicken and cut it into 10 smaller pieces. Marinade the chicken pieces with some salt,ground black pepper and chinese cooking wine. Set aside in the fridge to marinade for at least 6 hours or overnight.
Soak some chinese mushrooms in some hot water to rehydrate them. Keep the mushroom water for the stew later. Heat a large deep stock pot and add some olive oil in it. Fry the minced garlic and shallots till fragrant. Then  add the mushrooms and fry till slightly brown. Add the chicken pieces and fry for about 2 minutes. Then add  the water to the stock pot and the remaining mushroom water too. Cover the pot and bring to a boil. Then  lower the heat to simmer for about 2 hours. Dish it out and serve hot with some rice or french garlic bread.
