We love berries in the summer time and last two weeks ago, we went to a local farm to pick some blueberries....we got a large tub of blueberries.....I was browsing a recipe in one of my files and discovered this recipe for berries pie but I love blueberries and peaches too, so I put them together in this recipe....
Blueberries Peach Pie
Ingredients :
1/2 cup unsalted butter
2 oz sugar
2 egg yolks
1 cups all purpose flour
1/2 tsp salt
Filling:
1/3 cup lemon juice
2 oz sugar
2 eggs
1 cup whipping cream
1 tbsp lemon zest
2 cups blueberries
2 peaches - cut into thin slices
Directions :
Pastry
Cream butter and sugar together until smooth and add egg yolks to blend. Stir the flour and salt and then mix just till dough comes together. Turn out onto a lightly floured surface and knead 1 minute. Shape dough into a disc and wrap to chill in the fridge for 1 hour.
Preheat the oven to 350F.
On a lightly floured surface , roll the dough out into a round disc about 1/4 inch thick. Line a 10 inch pie plate with the round disc and trim rough edges and chill for 30 minutes. Prick crust bottom with a fork and bake for 15-20 minutes till the crust is lightly brown. Allow to cook before filling.
Filling
Whisk together the lemon juice , sugar , eggs , cream and zest and pour into the pie plate. Arrange the blueberries and sliced peaches on top of the pie and bake it for another 25-30 minutes till the filling is set. Allow to cool before slicing to serve with a dollop of your favourite ice -cream and some vanilla whipped cream.
