Lattara's Beef Curry

Well , well , well our 10th. wedding anniversary came by swiftly and went by like a lightning and all my friends all said wow.... time really flies and where does time go.....gee...we had a simple Malaysian dinner at our humble home and I cooked this simple lower fat beef curry as I had substitute  the coconut milk with some low fat skimmed cow's milk....


Lattara's Beef Curry 
Ingredients : 
2 lbs beef chuck stew - cut into 1 inch cubes
1 tsp salt
1/2 tsp ground black pepper
1 tsp coriander powder 
1 tsp cumin powder 
1 tsp aniseed powder 
1 tsp chilli powder (according to your level of spicy taste)
2 cups low fat milk 
6 red medium potatoes - peeled and cut into quarters 
2 stalks lemon grass - slightly bruised with knife 
1 inch galangal - minced 
4 shallots - minced 
4 cloves garlic - minced 


Method : 
First heat a large pot or wok with some olive oil and then fry the minced shallots, garlic and minced galangal till it is fragrant for about 5 minutes. Then add the ground spices to fry for another 2 minutes . Add the beef stew and potatoes to the wok or pot and stir till incorporated. Gradually add the milk and lemon grass and salt and black pepper to taste. Bring to a boil and then simmer the curry for about an hour till the beef is tender and the potatoes are soft and cooked through. Serve warm with some plain rice,
roti prata or french bread.
