I was looking for an alternative way to cook chicken and found this nice and easy recipe from a cookbook for making a traditional delicious fragrant bbq chinese chicken in an oven....using some chinese tea leaves.....you can use any chinese tea leaves but I think I prefer Jasmine tea leaves as they are really fragrant and makes my whole house smelled great for the whole day after the chicken was cooked.....grin***
Easy Tea Smoked Chicken
Ingredients :
1 whole chicken - washed and trimmed
1 tsp salt
1/4 tsp white pepper
1 tsp light soya sauce
1/2 cup long grain rice
2 tbsps brown sugar
2 star anise
1/2 tsp five spice powder
3/4 cup Jasmine tea leaves or green tea leaves
1 piece orange peel
Method :
Marinade the chicken with the salt, white pepper and light soya sauce overnight in the fridge.
Place the rack on bottom level of oven. Preheat oven to 350 F/ 180 C.
Remove the rack from the roasting pan and cover bottom of roasting pan with aluminium foil. Mix the rice , tea leaves , orange peel and the spices in the roasting pan and place it in the oven till the mixture starts to smoke. Place chicken on the rack to bake at 350 F / 180 C for about 1 hour 15 minutes till the juices run clear.
Serve chicken with some plain rice.
