Peachy Clafouti



We had bought a lot of peaches last summer and preserved some of them for winter.....and I took some out to make my twisted version of the cherry clafouti as we love the sweetness of the peaches when they are fully ripe....it is a delicious and healthy way to make desserts without adding too much sugar to it.....serve it with some whipped cream and fresh berries and peaches....yummy.....my son would always says this word....when I make clafouti....


Peachy Clafouti 
Ingredients  :


6 oz cake flour
1 tsp baking powder
pinch of salt 
4 oz sugar 
3 large eggs 
4 oz butter 
3/4 cup milk 
4 fresh peaches - peeled, pitted and sliced thinly
2 tbsps lemon juice 
1/2 tsp ground cinnamon 
1/2  tsp vanilla extract 

vanilla ice cream and some blueberries to garnish 


Method :  

Preheat the oven to 400F.
Peel, remove the pit of the peaches and cut them into thin slices. Mix in the lemon juice to prevent them from turning brown. Arrange the sliced peaches overlapping on a round glass pie dish.Beat the eggs and sugar together in a large bowl. Then add the milk and mix well. Add the flour mixture to the batter and stir till combined. Pour the batter over the peaches  and bake at a preheated oven  for about 35 -40 minutes in the middle of the oven till golden brown. 
Let it cool on a wire rack for 10 minutes and s
erve the clafouti warm with a scoop of vanilla ice cream and fresh blueberries.
