Well, well, I have been very very busy since we had opened our creperie and finally, I have some time to sit down and write my blog and share my home tradition on Christmas morning. We have these special sweet crepes for breakfast on Christmas morning before we open our presents......Enjoy making them at home !!!

Joyeux Noel Crepes
Ingredients :
1 cup whole wheat flour
pinch of salt
3 eggs
3 tbsps melted butter
2/3 cup 2 % milk
2/3 cup water
Method :
Melt the butter in a saucepan over medium heat and set it aside to cool. Measure all the dry ingredients into a large mixing bowl. Beat the eggs in another large mixing bowl with the milk and water until combined. Add the melted butter and mix well.
Add the flour mixture into the wet ingredients and whisk until well blended. Put the batter into the fridge and let it rest for 2 hours before making crepes.
Grease crepe pan and heat it over medium heat until hot. Pour about 6 tbsps of crepe batter into the pan and swirl until it covers the bottom quickly. Cook for 1 minute and then flip it to cook for another minute on the other side.
Spread some marmalade jam on top of the crepe and add some milk chocolate chips on top of the jam. Let it melt for about 2 minutes in the pan. Lift it from the pan and roll them into a baton. Sprinkle some icing sugar on top of it and serve it with a dollop of whipped cream.
