Seafood Paella Ala Lattara Style
Ingredients : -
1 cup of Basmati rice
2 cups of water
1/4 tsp salt
3 shallots- chopped
3 cloves of garlic - minced
1 tsp smoked paprika
500 gms prawns
200 gms squid
200 gms clams
3 stalks of green onions - chopped
2 sprigs of fresh parsley - for garnish
1 pinch of saffron - 5-10 strands - soak in a bowl of hot water (10 ml)
Cooking Olive Oil
Method : -
First , wash the rice properly and keep it aside. Then prepare shallots and garlic by chopping it finely. Clean the prawns and squid and leave in the fridge. Soak the clams in a bowl of clean water with 1 tsp of salt and leave it in the fridge for 1 hour. The clams will spit out the dirt and sand into the water and it will be clean. The clams will be clean after you rinse it after the soak. { Do this and you won't be eating sand later 😀 }
Chopped the green onions and set aside.
Heat up a large wok or deep frying non stick pan first. Then add some olive oil ( about 1 tbsp) into the pan / wok and then put in the chopped shallots and fry till fragrant. Add the minced garlic and fry for a few minutes . Then add the rice and fry for about 5 minutes till fragrant. Add the salt and the smoked paprika stir fry a while , then add the 2 cups of water to the pan / wok. Increase the heat of the stove to cook the rice. Lower the heat and simmer for about 20 minutes. After 10 minutes , add the squid , prawns and clams to the pan/wok and cover with a lid to cook for another 10 more minutes. Add the saffron liquid to the pot at the last 5 minutes before the end of the cooking time.
Serve hot with the fresh sprigs of green parsley and a drizzle of extra virgin olive oil on top.
