Chinese Style Rotini Pasta With Carrots And Broccoli 
Ingredients : 

300 gms rotini pasta

2 carrots - peeled and cut into small cubes / chunks

1 medium broccoli  - cut into small pieces & cut the stalk into thin slices

300 gms minced pork - season with some salt & black pepper

4 stalks spring onions -sliced diagonally 1/2 inch long

4 sprigs cilantro leaves  ( coriander leaves)

4 shallots - peeled & chopped

2 cloves garlic - peeled & minced

1 tbsp light soya sauce

2 tbsps dark soya sauce

1 tsp black pepper


Method : -  

Put a large pot of salted water to a boil. When the water boils , add the rotini pasta and cook it for 8 mins for al dente.
Peel the carrots and cut into small cubes . Wash the broccoli and cut them into smaller florets and cut the stalk into thin slices too. Season the minced pork and set aside in a bowl in the fridge to marinate for at least 4 hours or overnight. Wash the spring onions and sliced them into 1/2 inch pieces. Prepare the shallots and garlic and heat a large wok to saute the shallots and then add the garlic till fragrant. Then add the minced pork to fry for about 5 minutes till light brown. Add the chopped carrots and broccoli to cook for about 8 minutes. Add the  cooked rotini pasta and light soya sauce and dark soya sauce with black pepper. Stir the pasta with the spatula for a  couple of minutes and serve it on a large platter. Decorate with  some cilantro leaves and chopped spring onions.
