We love to eat fried chicken but it is not so healthy for us to eat it all the time , so I went to research online to find alternative recipes to make healthy baked chicken for my family. I had found one which uses crushed cornflakes ..I added some fine grinded oat flakes to the recipe to make these delish "bad boys" . They tastes like the fried ones too...
Crispy Baked Chicken
Ingredients : -
1 whole (1.8 kg) free range chicken - cut into 10 pieces
2 tsps salt
1 tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
1 tsp onion powder
2 tbsps olive oil
2 large eggs - beaten
400 gms cornflakes - crushed
200 gms fine grinded oat flakes
Method : -
Season the chicken pieces with the salt , black pepper , onion powder , garlic powder amd smoked paprika. Leave to marinate in the fridge overnight.
Preheat the oven to 400 F / 200 C . Coat the chicken pieces with the beaten eggs and then coat them into the crushed cornflakes and fine oat flakes . Arrange them on a large baking tray about 1 cm apart.
Bake them in the oven at 200 C / 400 F for about 50 minutes till cooked thru , crispy and golden brown.
